Cooley Bay’s German Hefeweizen

Few beer styles are as instantly recognizable or as deeply rooted in tradition as the German Hefeweizen. Originating in Bavaria centuries ago, this classic wheat beer has long been celebrated for its refreshing character, vibrant aroma, and unmistakable cloudy appearance. The name itself translates to “yeast wheat,” a nod to both the generous portion of wheat malt used in brewing and the living yeast intentionally left suspended in the finished beer. Once reserved for Bavarian royalty and noble families, Hefeweizen survived changing beer trends and nearly faded into obscurity before experiencing a remarkable resurgence in the 20th century. Today, it remains one of Germany’s most beloved beer styles and a benchmark of traditional brewing craftsmanship.

A traditional German Hefeweizen is brewed with a high percentage of malted wheat, creating a soft, pillowy mouthfeel and signature hazy golden color. Yet the true personality of the beer comes from its yeast. During fermentation, specialized German yeast strains naturally produce notes of ripe banana, clove spice, bubblegum, and subtle vanilla without the addition of fruit or spices. The result is a beer that feels lively, aromatic, and remarkably refreshing all at once. Unlike hop-forward modern ales, Hefeweizens focus on balance and drinkability, with low bitterness and bright carbonation allowing the yeast character to shine.
