French‑Style Saison: Tradition, Technique & Texas Taste
In the coming weeks, we will be releasing our first French‑style Saison, continuing a lineup that began in July that includes a blonde ale, ESB, Irish red, stout, and Belgian Single—and soon the Saison among other classic styles like rye, English brown, Scottish light, and Oktoberfest.
A Touch of French Tradition
Rooted in rustic charm and brewed with a spirit of seasonal celebration, the French Saison is a farmhouse ale that bridges history and modern craft with elegance. Originating from the northern regions of France and neighboring French-speaking areas of Belgium, Saisons were traditionally brewed during the cooler months of winter and spring to be stored and consumed by farmhands in the summer—hence the name, which means “season” in French.
These early Saisons were practical and varied, crafted with whatever grains, hops, and yeast were available on the farm. No two batches were quite the same. Over time, the style matured into something more refined—yet it has never lost its sense of earthy spontaneity and terroir-driven character.
Style & Structure
This upcoming Saison will feature a crisp pale color, creamy white head, and bright carbonation, inviting aromas of lemon, coriander, pepper, and the slightest whiff of farmhouse funk. The palate will deliver zesty citrus up front, a hint of peppery spice and honey-like malt sweetness, finishing clean, dry, and refreshing. With an ABV of around 7%, it strikes a balance between flavor complexity and sessionability.
Why This Saison Matters
As we continue to refine and grow our brewery offerings, adding a Saison marks both style diversity and community enthusiasm for seasonal, elegant beers. It reflects our brewery’s commitment to patterns of tradition rooted in brewing, but local to North Texas.
A Toast Worth Making
In the modern craft scene, Saison has become a favorite among brewers who value tradition and experimentation alike. Whether brewed with fresh herbs, aged in oak, or simply left to shine on its own, the French Saison remains a testament to the art of brewing with purpose, patience, and passion. Drinking Cooley Bay’s Saison on the patio—perhaps alongside a beer board with house-made beer bread and beer cheese—offers a modern homage to that heritage.
So whether you’re a Saison novice or a dedicated farmhouse ale fan, this release exemplifies Cooley Bay’s growing ethos: handcrafted, authentic, approachable—and fun. Santé to a French‑style Saison in the heart of Texas!
